Ageing and curing techniques
Prosciutto: It is cured with sea salt and undergoes a drying process in controlled chambers. Its curing is artificially accelerated through "estufaje": the temperature of the drying rooms is raised to speed up the process, so maturation is much shorter. As a result, the ham's moisture is much higher. In fact, they are cut by machine, because with the texture they have it's almost impossible to cut them with a knife.
Jamón Ibérico: Ibérico ham is cured slowly in natural cellars. Each piece is strategically hung so that it “sweats” slowly, losing up to 35% of its weight. Pig breeds

Their younger age and, above all, lack of exercise result in meat that is not as deeply colored.
