Authentic bone-in Jamón 100% Ibérico from Spain

Understanding the craftsmanship behind a premium Spanish ham is essential to fully appreciating its quality. Choosing a whole bone-in ham from Alta Expresión COVAP means bringing home one of the most traditional expressions of Spanish gastronomy.

Our bone-in Jamón Ibérico is produced from purebred 100% Ibérico pigs raised in the Valle de Los Pedroches and fed on acorns during the montanera season. After a long and careful curing process, each piece develops its distinctive marbling, deep aroma and complex, lingering flavor.

The traditional bone-in format

A ham on the bone preserves the original structure and presentation of the whole leg throughout the curing process. This traditional format makes it possible to enjoy the full carving experience at home, from the first slice to the final cut.

Once placed securely in a carving stand, the bone provides stability and allows the carver to produce thin, even slices. This helps bring out the texture, aroma and melt-in-the-mouth quality that define Acorn-fed 100% Ibérico Ham.

From Serrano ham to acorn-fed 100% Ibérico ham

Both bone-in Serrano Ham and Acorn-fed 100% Ibérico Ham are part of Spain’s cured-ham tradition, but they offer very different tasting experiences.

Serrano ham generally has a milder flavor and firmer texture. In contrast, Acorn-fed 100% Ibérico Ham is known for its deep ruby color, delicate marbling and rich fat that melts naturally on the palate.

These characteristics come from the purebred Ibérico lineage, the acorn-based diet and the long curing process. Choosing a whole ham on the bone from Alta Expresión COVAP means selecting a product defined by time, origin and traditional craftsmanship.

Bone-in Ibérico ham and shoulder options

Every ham with a bone in our selection guarantees a premium, artisanal tasting experience directly from Spain:

  • Acorn-fed 100% Whole Ibérico Ham: The quintessential centerpiece offering a complete spectrum of textures across the hind leg.
  • Acorn-fed 100% Ibérico Pork Shoulder: The front leg delivers a sweeter, highly concentrated taste with exceptional marbling.
  • Gourmet Ibérico Ham Collection: Our finest Acorn-fed 100% Ibérico Ham, complete with a professional carving stand.
  • Acorn-fed 100% Ibérico Pork Shoulder with Carving Stand & Knife: The perfect introduction to the traditional Spanish art of carving.

The art of carving and preservation

Carving a bone-in ham at home is a traditional and rewarding ritual. Cutting thin, nearly translucent slices allows the marbled fat to soften on the palate and release the full aroma and flavor of the meat.

Between carving sessions, the exposed surface can be protected with some of the natural fat removed when opening the piece. Once the ham has been fully carved, the remaining jamón bone can be used to add depth of flavor to broths, soups and traditional stews.
