It comes exclusively from purebred Ibérico pigs, free-range raised in the dehesa and naturally fed on acorns during the Montanera season, creating a delicacy with bold character and unmatched authenticity.
Unlike Ibérico ham, known for its delicate and velvety profile, the shoulder offers a more robust, slightly saltier taste thanks to its bone content and denser muscle structure. Its flavor is aromatic, full-bodied, and concentrated an unforgettable experience for those who enjoy complex, intense notes.
As a whole bone-in piece, the yield is typically about 35% when carved at once, or slightly less (28–30%) if consumed gradually.
For the best experience, plate slices in a single layer with a gentle overlap, avoiding stacking to allow the meat to breathe and display its natural shine. Serving on a slightly warmed plate enhances the aroma and texture, making each bite even more memorable.
